"Shorbit" Traditional Egyptian soup - In Siwa Oasis

A light , refreshing soup served with meat dishes based on meat broth

Ingredients
- 1 l meat broth
- 1/2 cup small pasta known as ,,lisan astour,,(,,sparrow's tongue'')
- 2 tbsp olive oil
- 1 tomato
- 2 carrots grated
- 2 small firm zucchini cut in small pieces or grated
- small onion sliced
- 1/3 teaspoon coriander
- lemon
- salt to taste
- pinch of mint or dill
Instructions
- Bring meat broth to boil in a large pot.(broth might come from lamb, goat, camel, chicken, liver, or sheep stomach)
- Fry pasta until is browned.
- Take a skin from tomato, blend and fry on one spoon of oil till is thick.
- Add tomato to fried pasta, fry together for 1 minutes.
- Sauté onions until translucent.
- Stir into fried pasta with tomato, add carrots , zucchini, followed by broth, salt and coriander.
- Cook on medium fire 20 minutes.
- Served with either mint or dill sprinkled on the top and a squeeze of lemon
Notes
- A traditional Siwan soup served with every meal that includes boiled meat while its broth is used to flavour main course. Unlike other parts of the world where soup might be thick and hearty, Siwan soups are light and never eaten on their own.
